The sour lemon filling and buttery crust in these Lemon Bars go so well together. They're simple to make and great for any event, like a summer picnic or a cozy winter dessert.
Ingredients: 1 cup all-purpose flour. 1/2 cup unsalted butter, softened. 1/4 cup powdered sugar. 2 large eggs. 1 cup granulated sugar. 2 tablespoons all-purpose flour. 1/4 teaspoon baking powder. 1/4 cup fresh lemon juice. 1 tablespoon lemon zest.
Instructions: Preheat oven to 350F 175C. In a mixing bowl, combine 1 cup flour, softened butter, and powdered sugar. Press into the bottom of an ungreased 8-inch square baking dish. Bake crust in preheated oven for 20 minutes. In another bowl, whisk together eggs, granulated sugar, 2 tablespoons flour, and baking powder until well combined. Stir in lemon juice and lemon zest. Pour lemon mixture over the baked crust. Return to oven and bake for an additional 25 minutes, or until set. Allow to cool in the pan on a wire rack. Once cooled, dust with additional powdered sugar if desired. Cut into squares and serve.
