In less than an hour, you can make this easy, hearty White Bean Soup. It is a comforting and healthy meal because it is full of good things for you.
Ingredients: 2 cans white beans, drained and rinsed. 1 onion, chopped. 2 carrots, diced. 2 celery stalks, chopped. 3 cloves garlic, minced. 6 cups vegetable broth. 1 teaspoon dried thyme. 1 teaspoon dried rosemary. Salt and pepper to taste. 2 tablespoons olive oil.
Instructions: Put olive oil in a big pot and heat it over medium-low heat. Put in the carrots, onions, and celery. Cook the vegetables in oil until they get soft. Add the minced garlic and cook for one more minute. Add the vegetable broth and boil it. Add the rosemary, thyme, salt, and pepper, and mix them in. Turn down the heat and let it cook slowly for 30 minutes. If you need to, change the seasoning. Enjoy while hot!
