Ingredients: 10 mini bell peppers, halved and seeds removed. 1 lb ground beef or turkey. 1 packet taco seasoning check for low-carb or make homemade. 1 cup shredded cheddar cheese. 1/4 cup diced tomatoes. 1/4 cup diced onions. 1/4 cup diced avocado. 1/4 cup sour cream optional. Salt and pepper to taste.
Instructions: Preheat oven to 375F 190C. In a skillet, cook the ground beef or turkey over medium heat until browned. Add taco seasoning to the meat and stir until well combined. Fill each mini pepper half with the taco meat mixture. Place stuffed peppers on a baking sheet lined with parchment paper. Sprinkle shredded cheese on top of each stuffed pepper. Bake in the preheated oven for 12-15 minutes or until the cheese is melted and bubbly. Remove from oven and let cool slightly. Top each stuffed pepper with diced tomatoes, onions, avocado, and sour cream if desired. Season with salt and pepper to taste. Serve warm and enjoy!
