Forever making udon noodles

Chorizo and Tomato Risotto

Made a sweet and spicy fried rice. With chicken and honey, soy and sesame glazed pork belly. Rice always needs to be cold from the fridge so it doesn't stick. Sesame oil also mixed in your eggs. Onion first then rice. Once the rice is beginning to colour then add garlic. This way the garlic doesn't burn and become bitter. You always want to precook meats first then add them back in towards the end. Right at the end add some sweet chilli sauce. Make a hole in the rice and let it reduce a minute. It's to glaze the rice and not drown in sauce.

Making yellow rice. It's Achiote that gives its colour. You warm the seeds in oil to extract the colour and nutty flavour. Then you have to fish them all back out. Random fact; its Achiote that gives Red Leicester cheese its colour and flavour
