A quick and flavorful Instant Pot Hot and Sour Soup that combines the perfect balance of heat and tanginess. Loaded with mushrooms, tofu, and a variety of textures, this soup is a comforting and satisfying meal.
Ingredients: 1/2 cup sliced mushrooms. 1/2 cup tofu, cubed. 1/4 cup bamboo shoots, sliced. 1/4 cup wood ear mushrooms, soaked and sliced. 1/4 cup shredded carrots. 4 cups chicken or vegetable broth. 2 tablespoons soy sauce. 2 tablespoons rice vinegar. 1 tablespoon chili garlic sauce. 1 teaspoon sesame oil. 1/4 cup cornstarch mixed with 1/4 cup water. 2 eggs, beaten. Green onions, chopped, for garnish. Salt and pepper to taste.
Instructions: Combine mushrooms, tofu, bamboo shoots, wood ear mushrooms, and shredded carrots in the Instant Pot. In a bowl, mix together chicken or vegetable broth, soy sauce, rice vinegar, chili garlic sauce, and sesame oil. Pour the mixture into the Instant Pot. Close the lid and set the Instant Pot to Manual mode for 5 minutes on high pressure. Once the cooking cycle is complete, perform a quick pressure release. Open the lid and set the Instant Pot to Saute mode. Stir in the cornstarch-water mixture to thicken the soup. Slowly pour in the beaten eggs, stirring gently to create ribbons of egg throughout the soup. Season with salt and pepper to taste. Serve hot, garnished with chopped green onions.
