A delightful parfait featuring layers of double-baked chocolate brownie, light meringue, and fluffy whipped cream.
Ingredients: 1 package brownie mix. 3 eggs. 1/2 cup vegetable oil. 1/4 cup water. 1 cup chocolate chips. 4 egg whites. 1 cup granulated sugar. 1 teaspoon vanilla extract. 2 cups whipped cream. Chocolate shavings for garnish.
Instructions: Set the oven to 350F 175C and heat it up. Put the eggs, vegetable oil, water, and brownie mix in a bowl and mix them together well. Add the chocolate chips to the brownie batter and mix them in well. Put the brownie batter in a baking dish that has been greased. Bake for 25 to 30 minutes, or until a toothpick comes out clean. Wait for it to cool down. Get the meringue ready while the brownie cools. Beat the egg whites in a clean, dry bowl until soft peaks form. Gradually add the sugar and keep beating until stiff peaks form. Add the vanilla extract and mix well. Once the brownie is cool, cut it into small cubes. Put brownie cubes, whipped cream, and meringue in serving glasses or bowls one on top of the other until the glass is full. Put the parfait glasses back in the oven at 350F 175C for another 10 to 15 minutes, or until the meringue turns golden brown. Take it out of the oven and let it cool down a bit before you serve it.
