"you and me forever?"
If you live on the US east coast, specifically somewhere along the Appalachians, September/October is time to start cruising farmers’ markets and watching out for North America’s largest fruit, the paw paw.
Paw Paws used to be a tremendously important fruit, both to Indigenous people and white settlers. They’re a major source of fresh calories in late fall, because they fruit in October and are large and sweet. You never hear of them these days for the simple reason that they’re nearly impossible to mass market. They’re very soft and spoil very quickly. So, you can’t ship them for shit.
Nonetheless, in my area, they’ve continued on in the background, gaining strength as one of the few things that remains truly seasonal, making gains as a specialty crop. Most excitingly, several breeders in the West Virginia and Maryland area have been making enormous strides breeding for flavor, size, and ratio of flesh to seed. I’m not totally clear on why I’m so blessed, but I think literally all the major breeders and growers of paw paws are within a two hour radius of my house.
Not everyone I’ve had try paw paws has immediately liked them. I think it’s just because they’re really like nothing you’ve had. Usually, when you’re trying a totally new thing, you have to try it at least three times. First try is for “wow that was….sure a thing.” Second is for “but it’s kinda interesting!” Third is for “Why do I keep thinking about this thing? I…kinda want more?” Paw Paws, to me, are dessert that comes off a tree prepared. They’ve got an indescribably sweet tropical flavor and the texture of custard. They’re amazing.
So if you live in the Midatlantic US, I really encourage you to get a few to try. They’re a part of our history, and they could be an incredibly valuable sustainable crop in a more decentralized, more seasonal version of agriculture.
I checked on mine this morning; there are two trees at Home Farm that flower (and fruit) about two weeks apart from each other. I had to thin out quite a few seedlings from around these trees earlier this summer, and I thinned all the fruit I could reach. They were growing in clumps of 2 - 5, which is too hard on the branches when they’re bigger. These trees are only about ten yrs old and maybe 5 meters high, but they’re FULL of pawpaws!
I made a custard-type recipe with these last fall that was a spectacular fail (disgusting - had to throw it out.) I’m pretty sure I followed that up with a banana bread recipe, subbing pawpaw for banana, and that was good. I’d better look that up before I try again, though. I HATE failing and wasting ingredients.
SO. JEALOUS.
Yeah I haven’t found many good ways of cooking them. I’ve read you can cook them most ways you can cook bananas. If I get enough I’m 100% going to try the banana bread thing. Custard also didn’t work for us though–just lost all its flavor. Ice cream is spectacular. We froze a lot of the box we got in ice cube trays.
So, I’m reblogging again since I MUST nerd out even more about pawpaws, especialy some of the food science aspects.
Taste of them apparently varies quite a bit but mine are *exactly* like “ tutti-frutti”. (I mean the artificial flavouring, not the Italian stuff) It was a bit of a shock but I had to laugh at how fake it came across due to only ever having experienced that taste from candies/gum. Considering that the artificial flavour was developed in the late 1800’s, and in the US, I feel very confident it was based on the taste of pawpaws. ( And I’m super impressed they were able to do it do accurately using the tech of the time!)
The flavour compounds are very fragile so cooking them is not going to work well in most cases.
It’s not really well understood why, but the fruits have fats and other compounds that go rancid very easily so drying and canning are also not options. Pretty much fresh eating and frozen are the only good ways to use them but some people are figuring out how to use them in brewing.
One thing to keep in mind is that pawpaw fruits contain a neurotoxin called annonacin. Eating the seeds and skins can be dangerous and there are concerns that eating large amounts of the fruit pulp long-term, can cause neurological damage, similar to Parkinson’s. Amounts of annonacin vary in different strains and a yearly binge is unlikely to do much harm but some people may be more susceptible to it. ( On the flip side, it’s possible that those groups who had cultural traditions of eating them may be more resistant to any negative effects)
Wild trees were still growing in the Don river valley of Toronto as late as the 1960’s so I’m not sure how far north their full range was. I live at about that latitude but a bit west and one of my trees is fruiting for the second year so it’s likely that they can manage a bit colder. I know at least one guy is trying them in Quebec, zone 4.

Reblogging this because it’s time to start thinking about this and finding your local festival if you’re fortunate to have one. I’m extremely fortunate to be near enough to Michael Judd’s homestead, and remembered far enough in advance this year, to get tickets to his lovely small festival. My own trees (the ones that survived the invasives overrunning them) won’t be big enough to yield for a couple years yet.
Paw paw festivals also often offer trees for sale if you want to plant your own! I think you should. They’re an understory tree, so might be a great option for a rather shady suburban yard.
