A delightful combination of savory flavors, this Soy & Scallion Tofu Bowl has marinated tofu over hearty brown rice and garnished with cilantro, sesame seeds, and fresh scallions.
Ingredients: 1 block firm tofu, pressed and cubed. 2 tablespoons soy sauce. 1 tablespoon sesame oil. 1 tablespoon rice vinegar. 1 tablespoon honey. 2 cloves garlic, minced. 1 tablespoon grated ginger. 4 scallions, sliced. 2 cups cooked brown rice. 1 tablespoon sesame seeds, for garnish. 1 tablespoon chopped cilantro, for garnish.
Instructions: In a bowl, whisk together soy sauce, sesame oil, rice vinegar, honey, garlic, and ginger. Add tofu cubes to the marinade and let it marinate for 30 minutes. In a skillet over medium heat, add marinated tofu along with marinade. Cook until tofu is browned and marinade has thickened, about 10-12 minutes. In serving bowls, layer cooked brown rice, tofu, and sliced scallions. Garnish with sesame seeds and chopped cilantro. Serve hot and enjoy!
