Adam’s birthday is definitively stated in The Dream Thieves to be July 3rd, making him a Cancer. Blue’s comes up in Blue Lily, Lily Blue - no exact date aside from “Around when school starts” but school must start really damn early in Henrietta because she’s a Leo (July 23rd - Aug 22nd) according to a Tumblr post by Stiefvater rather than a Virgo (Aug 23rd - Sept 22nd) (Personally I figure then she has gotta be a Virgo cusp but that’s just my own headcanon). Ronan’s birthday happens in The Raven King, while the exact date isn’t given it is the autumn then and we are told by Stiefvater that he is a Scorpio (Oct 24 - Nov 21), unfortunately the book makes reference to both October AND November for the season so we don’t know exactly with (“The grass was strikingly green for October,” is at the beginning of chapter 64, but chapter 54 states “He stepped onto a screen porch and looked out at the black November.” … shrug emoji??) We also know that during the course of the whole book series, Gansey remains seventeen. He’s the only one who doesn’t have a birthday. Raven Boys starts on St Mark’s Eve iirc which is April 24th! SO what we can infer from that is that Gansey’s birthday lies somewhere between the end of November and the early April, allowing for Saggitarius, Capricorn, Aquarius, Pisces, Aries, or possibly a Taurus with an Aries cusp.
