It's so nice out today that I had a chance to bust out some shorts. Very few people who know how significant this is. This is the first pair of shorts I've gotten in like 7 years. For the past few years, it didn't matter how hot it was outside...you wouldn't catch me in anything shorter than capris b/c of my self-consciousness about my legs. This year that all changes. The one thing this journey has definitely taught me is that if there is something about life that you don't like...stay focused and work hard to change it. A new dress courtesy of my wonderful parents. I didn't have much in my closet in the right size...so they blessed me with a few things while I was back in TN. I have the best parents and support group! The encouragement I get from friends and family just keeps pushing me forward, and they give me the confidence to get out of my comfort zone. #TodaysCleanLunch Still haven't made time to cook...so it's a good thing the cafeteria keeps grilled chicken on the menu. I brought some spinach and mushrooms from home to help round out the meal. Then...there's the yummy grapes for a snack later. This just goes to show that you don't always have to prep every meal...it's about making healthier food choices, in general. Today's lunch: Shrimp with sautéed kale and sweet peas, the sauce in this dish is what makes it so tasty. A little season salt, pepper and olive oil. #yummers 😋 The scallop/shrimp dish from the other day was sautéed with soy sauce.
