Because on the one hand, it’s all just window dressing to set up the “fuck” joke. But on the other hand, this moment gives you so much Eliot character information.

Eliot is very, very smart, and he knows it. Parker lists out the sounds she needs, and Eliot immediately says he’s on it. Because this sort of mental challenge is something Eliot considers to be well within his wheelhouse. And then, within moments, he comes up with a phrase that mostly does the trick.

Eliot knows his food. This ends up being a defining character note, and it’s introduced here as he goes through his encyclopedic knowledge of fancy dishes and comes up with a plausible-sounding offering, again, within seconds.

Eliot loves trolling people. The whole “greasy duck” thing, the feigned confusion to get the mark to actually say “pâté d’escargot avec beurre d’Argentine,” the anger the mark feels after he realizes it’s actually shrimp — Eliot is clearly amused as hell the entire time.
