Ingredients: 1 lb ground turkey. 1/2 lb chorizo sausage, casings removed. 1/2 cup breadcrumbs. 1/4 cup finely chopped onion. 1/4 cup chopped fresh cilantro. 1 tsp ground cumin. 1/2 tsp paprika. Salt and pepper to taste. 4 burger buns. 1 cup lettuce leaves. 1 tomato, sliced. 1/2 red onion, thinly sliced. 4 slices pepper jack cheese. 1 avocado, peeled and pitted. 1/4 cup sour cream. 1 lime, juiced. 1 clove garlic, minced. Salt and pepper to taste.
Instructions: In a large bowl, combine ground turkey, chorizo, breadcrumbs, chopped onion, cilantro, ground cumin, paprika, salt, and pepper. Mix until well combined. Divide the mixture into 4 equal portions and shape them into burger patties. Preheat your grill or stovetop grill pan to medium-high heat. Cook the burger patties for about 5-7 minutes per side or until they are cooked through and have nice grill marks. Top each patty with a slice of pepper jack cheese during the last minute of cooking. While the burgers are cooking, prepare the guacamole. In a bowl, mash the avocado and then mix in sour cream, lime juice, minced garlic, salt, and pepper. Mix until creamy and well combined. To assemble the burgers, toast the burger buns lightly on the grill. Place a lettuce leaf on the bottom bun, followed by a turkey-chorizo patty. Add sliced tomato and red onion on top of the patty.
