Ingredients: 1 cup carrots, peeled and chopped. 2 tablespoons olive oil. 1/4 cup tahini. 2 cloves garlic, minced. 2 tablespoons lemon juice. 1/2 teaspoon ground cumin. 1/4 teaspoon paprika. Salt and pepper to taste. Lettuce leaves, for sandwich. Sliced cucumber, for sandwich. Sliced bell peppers, for sandwich. Sliced avocado, for sandwich. Almond flour bread or lettuce wraps, for sandwich.

Instructions: Get the oven ready by heating it up to 400F 200C. Spread the chopped carrots out on a baking sheet after mixing them with 1 tablespoon of olive oil. For 20 to 25 minutes, roast carrots until they are soft and slightly caramelized. Put roasted carrots, tahini, garlic that has been minced, lemon juice, cumin, paprika, salt, and pepper in a food processor. Blend until smooth, then slowly add the rest of the olive oil until you get the consistency you want. Check the seasoning and make changes if needed. Spread a lot of the roasted carrot hummus on slices of almond flour bread or lettuce wraps before putting the sandwich together. Add bell pepper slices, lettuce leaves, and avocado slices on top. Another slice of almond flour bread or a tight wrap of lettuce can be used to close the sandwich. If you want, cut it in half and serve.
