Ingredients: 3 ripe bananas, peeled and frozen. 1/4 cup brewed coffee, cooled. 2-3 tablespoons maple syrup or agave syrup. 1/2 teaspoon vanilla extract. 1/4 cup almond milk or other plant-based milk.
Instructions: In a blender or food processor, combine frozen bananas, brewed coffee, maple syrup, vanilla extract, and almond milk. Blend until smooth and creamy, scraping down the sides of the blender or food processor as needed. Taste and adjust sweetness if necessary by adding more maple syrup. Transfer the mixture to a freezer-safe container and freeze for at least 4 hours or until firm. Before serving, let the ice cream sit at room temperature for a few minutes to soften slightly. Scoop into bowls or cones and enjoy!
