Slow Cooker Dakjjim is a Korean dish of braised chicken that is full of cool and spicy tastes. Using a slow cooker makes sure that the chicken is soft and the rich sauce and vegetables are mixed in.
Ingredients: 1.5 lbs chicken thighs, bone-in, skinless. 1/2 cup soy sauce. 1/4 cup brown sugar. 1/4 cup rice wine mirin. 3 cloves garlic, minced. 1 tablespoon ginger, minced. 1 tablespoon sesame oil. 1 tablespoon gochujang Korean red pepper paste. 2 carrots, sliced. 1 onion, sliced. 1 potato, cubed. 2 green onions, chopped for garnish. 1 tablespoon sesame seeds for garnish.
Instructions: In a bowl, mix soy sauce, brown sugar, rice wine, garlic, ginger, sesame oil, and gochujang. Place chicken thighs in the slow cooker. Pour the sauce mixture over the chicken. Add carrots, onion, and potato to the slow cooker. Cover and cook on low for 6-8 hours or high for 3-4 hours, until chicken is tender. Garnish with chopped green onions and sesame seeds before serving.
