Ingredients: 500g chicken thighs, boneless and skinless, cut into strips. 1 cup coconut milk. 4 tablespoons soy sauce. 3 tablespoons kecap manis sweet soy sauce. 2 tablespoons grated fresh turmeric. 3 cloves garlic, minced. 2 tablespoons brown sugar. 1 teaspoon ground coriander. 1 teaspoon ground cumin. Salt and pepper to taste. Wooden skewers, soaked in water. For Cashew Sauce:. 1 cup roasted cashews. 1/2 cup water. 2 tablespoons lime juice. 1 tablespoon soy sauce. 1 tablespoon honey. 1 teaspoon grated ginger. 1 clove garlic. Salt to taste.
Instructions: In a bowl, combine coconut milk, soy sauce, kecap manis, turmeric, minced garlic, brown sugar, ground coriander, ground cumin, salt, and pepper. Mix well to create the marinade. Add the chicken strips to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 2 hours, or preferably overnight for better flavor. Preheat the grill or barbecue to medium-high heat. Thread the marinated chicken strips onto the soaked wooden skewers. Grill the skewers for 8-10 minutes, turning occasionally, until the chicken is cooked through and has a nice char. For the Cashew Sauce, blend roasted cashews, water, lime juice, soy sauce, honey, grated ginger, garlic, and salt until smooth and creamy.
