I dont think the line "it's not cannibalism if we aren't equal." gets enough attention because it gives so much more meaning to the "I have to eat him" scene. Hannibal hasn't even CONSIDERED eating Will, an equal, to the point that the realization comes as a surprise. On top of that, with Will it is the act of consuming someone with love, yearning for connection, much like his sister. I'm not even sure that he's had someone he finds to be an equal and wants to consume since he ate his sister either.
