Begging someone to prescribe my protagonist some Ritalin for my sanity I canât take this.
I just love duos I love when characters are matched sets I love when you can't have one without the other. Not necessarily in a romantic way. It often is but this also applies to besties and mortal enemies etc
Sometimes characters get pair-bonded for life like parrots and it's so good. Makes me go insane every time
Any tips for showing character development gradually in more subtle ways throughout the story, so that the bigger changes don't feel like they came out of nowhere?
Sure!
Basically, what you need to do is recognize that most people do not change because of one specific incident. They change because lots of little ones slowly chipping away at who they once were.
Say you're writing a portal fantasy story. Your protagonist Bob is in another world with conflicts between two countries he has no prior knowledge or investment in one way or the other. Bob starts in Country A, but someone from Country B shows up and persuades them to go there.
This persuasion works because Bob don't know much about Country A except he just got sent there and is having some cultural whiplash, and this guy from Country B seems cool. Bob's convinced: time to leave Country A because Country A sucks. Then, Various Outside Forces prevent them from going to Country B.
While they wait to get out of there and go to Country B, they learn about weird plants in Country A. They meet people in Country A. They learn about people from Country A who were hurt by Country B. They make a home in Country A with a nice quilt they bought from a weaver who threw in a free bag of cookies. And along the way, your reader also got invested in this tiny little house with weird plants and nice quilts and their friends in Country A.
So when they finally once again have a chance to leave for Country B, they have changed and don't want to, because little things have changed their mind.
Or pick a character who is invested in Their Cause to save humanity. But as they continue on this quest, little things keep happening. People yell at them for trying to clean up water. They give a homeless person a place to stay and wake up the next morning with their entire house robbed clean. Every little thing they do in service of their cause hurts them. Over, and over, and over, they keep getting hurt. Each thing they do that backfires on them, they decide they can't keep doing that anymore so they'll focus their attention elsewhere
So when they decide their cause is a lost one, the reader is willing to buy into that. Why would anyone want to keep doing that anymore? It hasn't been working. They keep getting hurt. Nothing is helping. And thus you have completed this character's Villain Arc.
This works even if some things do question the character's decisions and progression. It doesn't have to be 100% one way or the other. If some things they do work, that can help a reader understand why they haven't changed yet, and it often feels more realistic that way. If Country A isn't perfect, but Bob still loves it, that's okay, and it's still believable.
Basically, you want to a slow "boil a frog" type thing. Little smaller things that they're willing to accept into their worldview that slowly add up over time.
But maybe your character does have a big climactic moment where they change their mind about something. But when that happens, it's because two of their values have come into hard conflict and forced them to re-evaluate one.
So you establish both values beforehand. Maybe they're deeply loyal to a country that picked them up out of poverty and gave them a purpose in life. A home, friends, a family. So when that country asks them to be a soldier and kill someone else, they agree. But then they find this person they're supposed to kill, and it's one of their friends. The friends this country gave them. Do they value their country, for giving them a happy life with plenty of other good things, more, or do they value this friend and the bonds of friendship they were so desperate for even before this country came into this picture, more?
Since you've already established both values, and maybe even established which is more important, when it comes time to make a choice between the two and discard one, the discarding of one value and changing as a person will be part of the character you've already shown.

Depression is such an effective tranquilizer that it creates a great opportunity for plot twists in your real life. I have a pretty consistent opinion of myself which is "low" and "never ending guilt and shame for reasons I don't understand."

You always hear about how depression (and anxiety) lies to you and distorts reality, but there is logically knowing that and then there is like, physical proof of it and you are suddenly Neo in the Matrix jumping out of the fucked up little tube machine.
Look, medication and therapy are essential, but I think we shouldn't underestimate this form of treatment

Ohhh, dramatic showboat theatre kid whoâs too damn smart for his own good and decided to become a villain For Reasons (?????) but has no real interest in crime and falls in love and then stops being a criminal.

Do we think that
A) Sherlock always walks on Liamâs right side so he can easily see him

B) Sherlock always walks on Liamâs left side so he knows he has a buffer in his blind spot?

I would say B, but canon has thus far not expressed a strong preference:

I would say this is actually the most intentional William ever was about this, because he sat on the bench so far to the left that no one could have sat on his left side. The only option was to sit on his right, which was probably at least partially intentional. Was he waiting specifically for Sherlock? Maybe. Itâs not clear.
During their walk around Brooklyn, they swap sides:
During their conversation about the Pinkertons, Sherly and Billy were both on his blind side:
Walking home, heâs on Liamâs good side again.
Once they get home, however, Sherlyâs on his blind side again:
There doesnât appear to be a real clear pattern, either (maybe there will be later).
Anyway, it appears that:
Sherlock doesnât feel the need to hide from William
and
William trusts Sherly with his bad side (not like Sherlock doesnât know all about that already anyway)
How do you write good, realistic dialog that gives each character their own unique voice?
Here's an exercise: write different characters in a piece saying the same general thing:
Character A: Hey, y'all! Glad to be here finally.
Character B: Hi, everyone! It's nice to see you all at last.
Character C: Yo, good to see ya, how've ya been? Not been waiting too long?
Character D: Hello, apologies for my lateness. Thanks for waiting for me.
Character E: Oh my God, so sorry I'm late. I'm here, I'm here. Hi. What'd I miss?
If you look at these, these characters:
Have different ways of referring to the people they're greeting
Have different ways of greeting them
Have different ways or asking after the people already there
Have different niceties they focus on: the apology, asking after the people's well-being, a formal greeting
Some of them apologize. Some don't.
Some of them put that apology and/or acknowledgment of their lateness up front. Some don't.
All of these things indicate different voices and different things about who the character is as a person, and how they communicate with someone! You can hear all of these characters very differently, you can probably picture them different even with no descriptions, you could probably pronounce these sentences different. But they're all saying basically the same thing in the same situation.
What you're looking to do here is craft an idiolect for a character Thanks, College, I actually have a paper on Uncle Iroh's idiolect I had to write for a class hanging out on my computer. I think that kind of thing helps: analyzing the way people and especially fictional characters speak.
You know how in character design, people want each character to have a distinct silhouette not just marked by colors or what not? You have to do the same thing with fictional characters. So analyzing the way fictional characters distinct themselves is important to being able to create a fictional character's speech pattern.
I said above that there's such a thing as "too realistic" and that's true. What you're trying to do when writing a character or writing dialogue is not to accurately imprint reality, but to create a facsimile of reality. Things like filler words and cursing reads much stronger on a page or on a screen than it feels when spoken aloud in real life. They should be pared back to make something that feels real without necessarily being real.
Advanced Level Stuff to consider:
Regionalisms for the same concept. Is it "soda" or "pop" or "soda pop" or "coke"? Is it a "freeway" or a "highway" or a "tollway" or a "turnpike" or a "interstate" or a "toll road" or what. You can do this with fictional worlds, you just gotta kind of decide what came from where.
People will pick up on specific words that give them euphony. Pick one or two for a character if you want to be intentional about it.
Linguistic mirroring. People talk like people they like. They admire them, and they change in subtle ways to be more similar to those people. Make a character talk like their mom or favorite teacher or best friend.
Register and code-switching. Real people will talk differently to different people in different social situations. Sometimes this is flattened in fictional characters, but it doesn't have to be. People are likely to shave off the swearing in front of kids or at work, they're likely to carefully pronounce things in front of people who are important to them.
The shortest answer to "How to make dialogue sound realistic?" is "Please use contractions."

People are lazy and most languages evolve in ways to have fewer and easier sounds and shorter and merged words and lose letters and sounds because people just can't be arsed to pronounce them.
Contractions.
I do not know why people are so fond of the "never uses contractions" trope, but it's awkward and fake and even characters who have this As Their Thing often use them.
Characters use uncontracted words for specific reasons: Excessive formality. Awkwardness. Anger (this one is always super interesting). Foreign speakers.
It's very often a form of controlled intentionality, in other words. It's most common when people are being very, very careful with their words and measuring them, because they don't want to say the wrong thing.
And that's useful, in certain circumstances. But no one relies on this exclusively.
