Ingredients: 1 lb shrimp, peeled and deveined. 1 tbsp coconut oil. 1 small onion, diced. 3 cloves garlic, minced. 1 bell pepper, sliced. 1 cup coconut milk. 2 tbsp Jamaican curry powder. 1 tsp turmeric powder. 1 tsp ground cumin. 1 tsp ground coriander. Salt and pepper to taste. Fresh cilantro for garnish.
Instructions: In a large skillet, heat coconut oil over medium heat. Add onion and garlic, saut until fragrant. Add bell pepper and cook until softened. Stir in curry powder, turmeric, cumin, and coriander. Pour in coconut milk, stir until well combined. Add shrimp, season with salt and pepper.
