What Iâll offer you is knowledge on how to cook Gluten Free and live a Gluten Free life. Also Iâll throw in some crafts and maybe some knowledge on photography.
I havenât lived Gluten Free my whole life. My journey to being Gluten Free started roughly in the year 2008 when I started getting sick. I was in a lot of pain always and the doctors couldnât find a reason. I was told that I may have this or that. I was put on many medications and nothing seemed to make me feel better.Â
The first thing I started doing was removing processed foods. Removing processed foods ment more cooking from scratch, less quick easy foods, and less eating out.
Fast forward to 2010 my husband retired from the military and we become simi homeless an he was with out a job. Sadly my cooking from scratch was moved to the side because you eat what you can get at the cheap. I met people who were Gluten Free and Iâd snob nose at it thinking yeah they are full of shit. Until March 2013 we bounced in and out of being simi homeless. Life wasnât easy and I started getting sick again. I was in pain all the time and really depressed.Â
January 2013 I found out I had skin cancer thankfully it was caught right at the start of it but it ment small surgery, in and out of doctors office.Â
March 2013 we finally got on our feet and moved into a free standing home. I really started to read about being Gluten Free an started to remove Gluten from my diet.Â
Late July of 2013 I got very ill and the pain in my stomach was beyond anything I could handle. I was having major GI issues and doctors werenât really listening then finally I had a test done that showed that I was suffering from Biliary colic: This is the term often used for the severe episodes of pain that can be caused by gallstone blockage of the cystic duct.The gallbladder contracts vigorously against the blockage, causing spasmodic (or sometimes constant) severe pain. Finally some answers to why I kept getting sick. Again surgery was a need.Â
Something I found about about dealing living with out gallbladder is research that links gluten intolerance with gallstones. Â A good reason to keep your intake of grains low is to reduce the risk of developing a fatty liver
Much has changed since 2013 but here I am in 2016, living my life 90% Gluten Free.
I am not perfect about being Gluten Free. Being Gluten Free is a hard thing when the world around you isnât living Gluten Free. The worse thing about being Gluten Free is everyone and anyone wants to be Gluten Free. Every day and every meal I eat, I have to read the lables and question what is in the item I am eating.Â
What does living Gluten Free do for me, well here are the key points for me personally.
