These easy baked sweet potato spinach tater tots are a healthier alternative to traditional tater tots. Packed with flavor and nutrients from sweet potatoes and spinach, they make a delicious snack or side dish for any occasion.
Ingredients: 2 medium sweet potatoes, peeled and grated. 2 cups fresh spinach, chopped. 1/4 cup chickpea flour. 1/4 cup nutritional yeast. 1/2 teaspoon garlic powder. 1/2 teaspoon onion powder. Salt and pepper to taste. Cooking spray or oil for greasing.
Instructions: Warm up the oven to 400F 200C and use cooking spray or oil to coat a baking sheet. Grate sweet potatoes and chop up spinach. Add chickpea flour, nutritional yeast, garlic powder, onion powder, salt, and pepper to a large mixing bowl. Mix everything together well until it's all mixed together. With your hands, make little tater tots out of small amounts of the mixture. Leave some space between each tot on the baking sheet that has been greased. The tater tots should be baked in a hot oven for 25 to 30 minutes, flipping them over halfway through, until they are golden brown and crispy. Take them out of the oven when they're done and let them cool a bit before serving. You can eat your homemade baked sweet potato spinach tater tots as a healthy snack or side dish.
