SESAME!  This is Tartine Country Sesame Sourdough. I felt I was getting the hang of baking sourdough bread, so I wanted to try a new flavor. I bought some unhulled black sesame seeds a couple weeks ago in anticipation for this. I followed Maurizio’s recipe from the Perfect Loaf, which I think is essentially the Tartine Country Sesame Sourdough recipe. Got up early on Saturday morning and spent the next 10 hours at work on this (and baking loaves from the previous day). It was a success! I think this bread tastes incredible and I can’t wait to share with others.

The last photos are a before and after shot. The new scoring patterns were inspired by watching dozens of scoring videos on Instagram. They can be pretty addictive.

Following the in-depth explainer recipe from Maurizio at the Perfect Loaf, I had my breakthrough. Lots of work goes into this over several days, including twice-daily feedings to the starter. In the end, the taste and appearance were spot on and I was elated. Hoping this is just the beginning.
