Healthy ingredients like oat bran, whole wheat flour, fresh peaches, and blackberries make these vegan oat bran muffins taste great. They taste great and are full of healthy things like fiber, vitamins, and antioxidants.
Ingredients: 1 cup oat bran. 1 cup whole wheat flour. 1/2 cup coconut sugar. 2 tsp baking powder. 1/2 tsp baking soda. 1/2 tsp salt. 1/2 tsp ground cinnamon. 1 cup almond milk. 1/4 cup coconut oil, melted. 1 flax egg 1 tbsp ground flaxseed + 3 tbsp water. 1 tsp vanilla extract. 1 ripe peach, diced. 1/2 cup fresh blackberries.
Instructions: Warm the oven up to 375F 190C and grease or line a muffin tin with paper liners. To make the flax egg, mix water and ground flaxseed in a small bowl. Do nothing for 5 minutes so it can get thicker. Put oat bran, whole wheat flour, coconut sugar, baking powder, baking soda, salt, and cinnamon in a large bowl. mix them together. Put the melted coconut oil, flax egg, and vanilla extract in a different bowl and mix them together. Add the wet ingredients to the dry ones and mix them together just until they are mixed. Add the diced peach and blackberries slowly. Fill up about three quarters of the way to the top of each muffin tin cup with batter. Put it in the oven and bake for 20 to 25 minutes, or until a toothpick stuck in the middle comes out clean. After taking the muffins out of the oven, let them cool for 5 minutes in the pan before moving them to a wire rack to cool all the way down.
