I will start posting on here again, eventually.  I just started an education internship at a farm (my first day was yesterday!), school starts in a week, and I applied for a writing internship at The Borgen Project.  Even though this fall might be stressful, it feels like a good stressful.  My school schedule is chill--and English and Sociology filled, hehe--I get to work on a farm, I get free produce, I get to work with kids, I get to hold chickens (I love the adolescent chickies), and if I get the writing internship, I get to spread the word on reducing global poverty. Â
But, if you're a vegan blog, message me or the like because I'm always up for more vegans to talk to (and share recipes with!) and follow on here. Â
Now, off to dreamland and fairies and unicorns. Â
I forgot to bring like half my stuff to my mum’s house because I was too busy packing several varieties of herbal tea…..

Oh my goodness, it's been awhile since I posted on here. Â On a vegan-related note, I got an internship at a farm near me--I get free produce every time I go there ;)
I can't wrap my mind around complicated smoothies, with all the different additions (whey, protein, "wheatgrass?" etc.) and different kinds of fruits. Â I understand that they're healthy and all, but I much prefer my smoothies simple, sweet and to the point.
4-5 large ice cubes+ a handful of your favorite fruit (I like to do a berry mix!)+ sweetener (I use mostly agave, then a little sugar at the end)= hella good smoothie
Today, I made a smoothie with ice cubes, a BUNCH of blueberries (most of the small container I had), ~5 strawberries with the tops cut off, a drizzling of agave nectar (I put a significant amount) and ~1/2 teaspoon of sugar at the end. Â

NOTE: The fresher the fruit, the better. Â This is a great idea after buying some fresh fruit at the farmer's market!

Also, it has a lot of B vitamins, which are typically found in animal products, so vegans tend to have to work a little harder to get B vitamins (especially B 12).

As far New Year's Resolutions go, I've only stuck to one New Year's Resolution, ever. Â And I'm not exaggerating. Â On January 1st, 2010, I became vegetarian and never looked back. Â Since, I've become vegan, but regardless, I've stuck to that resolution. Â I honestly wonder how much of my lack of sticking to resolutions has to do with the fact that January never seems like a good time to implement lifestyle changes. Â School starts back up in January; even in California, a good portion of your thought process goes to how to keep warm.
So, I'm instead going to have Summer Resolutions:
1. Go to farmer's markets weekly
2. Start exercising
3. Replace all my not cruelty-free cosmetics to cruelty-free and vegan
4. Learn more about fair trade and buy more fair trade products
5. Read, read, read :)
6. Buy fresh flowers often, and get succulents for my room.
Also, I found a Bachelor's Program for Psychology and Social Justice, which may just be right up my alley. Win.
Easy and Delicious Bahn Mi (Chay) Sandwich
The other day, I was reading The Brief and Wondrous Life of Oscar Wao, and all the words in Spanish made me really crave Latin American food.  Unfortunately, I had no platanos, so those were out of the question, but I was able to whip together a sort of Latin American themed quick vegan dinner. Â
My Quick (Emphasis on the Quick) Vegan Dinner
Ingredients:
Italian Sausage Tofurky
Fresh Tomatoes (amount s up to you and your preferences)
Black Beans from a can (I used Cuban Black Beans from Trader Joe's)
Polenta (I used Polenta from Trader Joe's, as it is pre-cooked; Making polenta from scratch takes a long time, I've heard)
Vegetable BrothÂ
Epazote a.k.a. best spice ever
Salt
Any other spices you like
1. Heat up an iron skillet on medium heat, with a tablespoon or two of olive oil
2. While this is heating up, cut off a slice of polenta and heat it in the microwave for 50 seconds. Â When it is done, pour ~ 2 tablespoons of vegetable oil (this is only an approximation), and mix with a fork until in somewhat resembles mashed potatoes (the instructions on the package of polenta literally said the "mashed potatoes" part.....)
3. Chop up 1 Tofurky sausage, and however many tomatoes you would like to use.
4. Drain the black beans of excess liquid. Â Once again, amount of black beans is to your liking/preference.
5. Put Tofurky, tomatoes, black beans, and polenta in the iron skillet.
6. Then add epazote, as much as your prefer. Â Me, personally, I prefer lots of epazote!
7. Add a dash of salt, maybe a little pepper. Â Though I didn't use any more spices, some other ones that could taste good with this dish are: pepitas, cloves, Cajun salt, basil, paprika, etc.
8. Cook until all food is heated thoroughly. Â This step may require a taste test. Â It should take around 5-7 minutes too cook.
9. Put in a pretty bowl, and enjoy. Â On the side, I had some corn tortillas from Trader Joe's. :)
Also, note: Though this dish may not look the most beautiful once it's done cooking, it tastes quite amazing. Â Also, please excuse the fact that half my ingredients for my Latin American meal were Italian; I was limited to the ingredients in my fridge. Â

I live in a very diverse area, so I've been exposed to a wide range of international food options. Â I guess this is why mixing Asian curry, Cuban black beans, quinoa and brown rice seemed perfectly naturally to me. Â Regardless, it was quite tasty and quick.
I get bored with microwaveable dishes--really bored. Â I felt like I was heading to my grave, making Trader Joe's Panang Curry for my dinner, despite its tastiness.

So, just to keep things exciting, after I made it I put the veggies and sauce in a pan on the stove with some black beans from a can. Â And then, atop a rice/quinoa mixture they went. And it was hella good!
Curry with Black Beans, Brown Rice and Quinoa
Cooking time: ~10 minutes
1. Cook Trader Joe's Vegetable Panang Curry with Jasmine Rice for 3 minutes 40 seconds. Â (I wouldn't recommend the 4-5 minutes TJ's recommends--your food will most likely be overcooked.)
2. Take plastic wrapping off of Vegetable Panang Curry and let it sit for a few minutes, in which time you can put the jasmine rice in the fridge for another time.
3. Heat an iron skillet on the stove at medium heat with ~ 1 tablespoon of olive oil.
4. Once the skillet is heated, put vegetable curry and black beans from a can (I used TJ's Cuban Black Beans) in the skillet and turn up the heat to high. Â
5. Whip out Fresh n' Easy's Brown Rice with Quinoa and follow the instructions on the back, and zap in microwave for 1 minute 30 seconds. Â
6. When curry in skillet is boiling, cover it with a lid. Â (Do not turn down heat! Â Also, once it is covered, check it ocassionally.)
7. Put microwaved Brown Rice w/ Quinoa in a bowl.
8. Taste test curry/bean mixture to see if it's hot enough for your liking.
9. Put curry/bean mixture atop brown rice w/ quinoa.
10. I know it's corny, but enjoy!
And that, my followers, is how to make a quick, Asian/Latin American vegan meal.

I had a bunch of strawberries that were on their way out, so it was either freeze them for smoothies or make jam! This kind of jam (that lasts about 10 days in the fridge) is super simple. Just put all the ingredients in a pot and simmer them until it’s thick - this recipe makes one small jar. Stir occasionally - it should take about 45 minutes to get to jam consistency. The balsamic adds a nice kick that makes it a perfect compote for cheese and crackers at cocktail hour. (I also put it on greek yogurt with nuts which is pretty tasty!)
