Instructions: Preheat your smoker to 225F 107C with your choice of wood chips for smoking. Remove the membrane from the back of the ribs for better flavor penetration. Rub the dry rub generously over both sides of the ribs. Place the ribs in the smoker and smoke for 3 hours, maintaining a consistent temperature. In a small saucepan, combine Dijon mustard, apple cider vinegar, honey, soy sauce, and ketchup to create the glaze. Simmer for 10 minutes, stirring occasionally. After 3 hours, brush the ribs with the glaze and continue smoking for an additional 1-2 hours or until the ribs reach your desired tenderness.
