Sample of Japanese black tea, #wakocha, picked from a hillside of wild bushes found in the forest by the Kunitomo family three decades ago. @kunitomofarm see photos here They have tended to this hillside of tea bushes ever since and pick just a few kilograms a year. Ms. kunitomo told me by phone today that they wither it less than 20 hours and don’t oven roasted to fix the leaves at the end, but do dry the leaves after rolling…so not completely fixed. I admit I am less knowledgeable about Black tea production so I don’t know exactly what this means for the tea. Steeping: Tea 4g, Time 4 min, water 300 ml, 80C Flavor profile: very flavorful, complex, berries, nuts, with a slight astringency at the end. This morning off, dipping into some Sakurimidori black tea from @unytea.store. It's made from a Japanese tea bush cultivar that was specifically propagated because the leaves - apparently - smell like those of a cherry tree. In the flavor, I can see it. Behind the initial, nutty palatial delivery lies a sweet underpinning with a floral twinge. The steam also unleashes a subtly fruity fragrance. . . #blacktea #japanesetea #sakura #cherry #wakocha
