Весь этот процесс проходит в два этапа в двух котлах: в первом происходит обжарка с добавлением небольшого количества масла, затем перерыв, а затем во второй котел. Все вместе представляет собой сорокаминутный танец из 10 движений, последовательность которых нужно чувствовать наизусть – изготовления Лун Цзина особенное, выматывающее и требующее колоссального мастерства и отдачи.
