This Miso Collard Greens Stirfry is a quick and flavorful way to enjoy nutritious collard greens. The miso paste adds a savory umami flavor to the dish, while the colorful vegetables provide a pleasing visual appeal. Perfect for a healthy weeknight meal.
Ingredients: 1 bunch of collard greens, stems removed and leaves thinly sliced. 2 tablespoons miso paste. 2 tablespoons soy sauce. 1 tablespoon sesame oil. 1 tablespoon vegetable oil. 3 cloves garlic, minced. 1-inch piece of ginger, minced. 1 red bell pepper, thinly sliced. 1 carrot, thinly sliced. 1/2 cup sliced mushrooms. 1/2 cup sliced scallions. 1/4 cup vegetable broth or water. 1 teaspoon red pepper flakes adjust to taste. Salt and pepper to taste.
Instructions: Mix the soy sauce, sesame oil, and miso paste in a small bowl. Put aside. In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the finely chopped ginger and garlic to the heated oil and saut for approximately 30 seconds, or until aromatic. Add the carrot, mushrooms, and red bell pepper slices to the skillet. Fry for three to four minutes, or until they begin to soften. To the skillet, add the scallions and collard greens. After the greens begin to wilt, stir-fry them for a further two to three minutes. Stir in the vegetable broth or water and miso sauce mixture. Mix thoroughly to blend. Add the pepper, salt, and red pepper flakes. As necessary, taste and adjust the seasonings. Simmer for a further two to three minutes, or until the sauce slightly thickens and envelops the veggies. Take off the heat and serve warm. If desired, garnish with additional sliced scallions.
