Ingredients: 1 cup vital wheat gluten. 1/4 cup nutritional yeast. 2 tablespoons chickpea flour. 1 teaspoon smoked paprika. 1 teaspoon garlic powder. 1/2 teaspoon onion powder. 1/2 teaspoon ground mustard. 1/2 teaspoon ground coriander. 1/2 teaspoon ground black pepper. 1/4 teaspoon ground allspice. 1 cup vegetable broth. 2 tablespoons soy sauce or tamari. 2 teaspoons liquid smoke.

Instructions: In a large bowl, combine the vital wheat gluten, nutritional yeast, chickpea flour, smoked paprika, garlic powder, onion powder, ground mustard, ground coriander, black pepper, and allspice. In a separate bowl, whisk together the vegetable broth, soy sauce or tamari, and liquid smoke. Pour the wet ingredients into the dry ingredients and stir until well combined. The mixture will be sticky. Divide the dough into 8 equal pieces and shape each piece into a hot dog shape. Wrap each hot dog in aluminum foil, twisting the ends to seal. Steam the hot dogs for 40 minutes, adding more water to the steamer as needed. Once steamed, unwrap the hot dogs and let them cool slightly before serving. Serve on buns with your favorite toppings.

Ingredients: 2 cups cooked and mashed black beans. 1 cup finely chopped mushrooms. 1/2 cup finely chopped onions. 1/2 cup grated carrots. 1/4 cup rolled oats. 2 cloves garlic, minced. 1 teaspoon cumin powder. 1 teaspoon smoked paprika. 1/2 teaspoon salt. 1/4 teaspoon black pepper. 1/4 cup breadcrumbs. 4 whole wheat hot dog buns. Toppings of your choice lettuce, tomato, onions, ketchup, mustard, etc..

Instructions: In a large bowl, combine the mashed black beans, mushrooms, onions, grated carrots, rolled oats, minced garlic, cumin powder, smoked paprika, salt, and black pepper. Mix well until all the ingredients are evenly incorporated. Divide the mixture into 4 equal portions and shape each portion into a hot dog shape. Roll each veggie dog in breadcrumbs to coat the outside evenly. Preheat a grill or grill pan over medium-high heat. Alternatively, you can cook them on a stovetop in a skillet with a little oil. Place the veggie dogs on the grill and cook for about 4-5 minutes on each side, or until they have grill marks and are heated through. While the veggie dogs are cooking, lightly toast the whole wheat hot dog buns on the grill for a minute or two until they are warm and slightly crispy. Once the veggie dogs are done, place them in the toasted buns. Add your favorite toppings, such as lettuce, tomato, onions, ketchup, mustard, or any other condiments of your choice. Serve the homemade veggie dogs immediately and enjoy!

Ingredients: 4 large portobello mushrooms, stems removed. 1 bunch broccolini, ends trimmed. 4 low-carb hot dog sausages. 4 low-carb whole grain or lettuce wrap buns. 2 tablespoons olive oil. Salt and pepper, to taste. Optional toppings: avocado slices, sliced red onion, mustard.

Instructions: Preheat grill to medium-high heat. Brush portobello mushrooms, broccolini, and sausages with olive oil. Season with salt and pepper. Grill portobello mushrooms and broccolini for about 4-5 minutes per side, until tender and lightly charred. Grill sausages for 6-8 minutes, turning occasionally, until heated through and grill marks form. Toast buns on the grill if desired. Assemble veggie dogs by placing a grilled portobello mushroom, broccolini, and sausage in each bun. Add optional toppings as desired. Serve immediately and enjoy!
