Something I used to love and especially miss at Christmas is pate. Now there are all sorts of veggie and vegan pates out there but I can't touch mushroom ones and the lentil ones just aren't the same (of course they aren't, I know) There was a VBites one I really liked but my local Holland & Barrett have stopped stocking it boo. I'd heard talk of people making one with vegan Quorn pieces and kept meaning to have a go and here is the result of my first attempt! I like it! I'm pretty chuffed with it infact. Really, super simple and makes loads! (I would perhaps recommend halving the recipe to start) 1 pack vegan Quorn chicken pieces 1 large clove garlic 1 jar sundried tomatoes (tweak this to taste and budget-I used a jar from Aldi which is below £1) A few twists of pepper Asafoetida (I use this in place of onion) Olive oil Cook the Quorn as per packet instructions (I popped it in a frying pan with a little olive oil, asafoetida and water) Put in a food processor and add the sundried tomatoes (just tip the whole jar, oil and all) garlic and blitz Add a few twists of pepper to taste then another quick blitz to mix and smooth and TADA!
