Any day of the week, you can make this Ultimate Instant Pot Beef Stew. It's hearty and comforting. With the Instant Pot, the beef is soft and flavorful in a lot less time than with a regular stew recipe.
Ingredients: 2 lbs beef stew meat, cubed. 1 onion, chopped. 3 carrots, sliced. 3 potatoes, cubed. 2 cloves garlic, minced. 4 cups beef broth. 1/4 cup tomato paste. 2 tablespoons Worcestershire sauce. 1 teaspoon dried thyme. 1 teaspoon dried rosemary. Salt and pepper to taste. 2 tablespoons olive oil.
Instructions: Season beef with salt and pepper. Turn Instant Pot to saut mode and heat olive oil. Add beef and brown on all sides. Remove beef and set aside. Add onions and garlic to the pot, saut until translucent. Stir in tomato paste, thyme, and rosemary, cook for 1 minute. Add Worcestershire sauce and beef broth, deglaze the pot. Return beef to the pot along with carrots and potatoes. Close lid, set Instant Pot to stew/meat setting, and cook for 35 minutes. Once done, let pressure release naturally for 10 minutes, then manually release any remaining pressure. Adjust seasoning if necessary and serve hot.
