I’ve been trying to incorporate more plant-based proteins into my diet, and I’ve been experimenting with some tofu scrambles! This week’s veggie combo is shiitakes, spinach, scallions, garlic and jalapeño. The sauce is soy, sriracha, turmeric and cumin, with a bit of the Trader Joe’s mushroom umami seasoning. I promptly un-veganized it with a fried egg, but it would have been great without!
