A healthy and flavorful stir-fry made with cauliflower rice and mixed vegetables, perfect for a quick and easy meatless meal.
Ingredients: 1 medium head cauliflower, grated into rice-like texture. 1 cup mixed vegetables bell peppers, broccoli, snap peas. 2 cloves garlic, minced. 2 tablespoons soy sauce or tamari for gluten-free. 1 tablespoon sesame oil. 2 green onions, chopped. 1 tablespoon sesame seeds optional. Salt and pepper to taste.
Instructions: Put sesame oil in a large pan and heat it over medium-low heat. Mix in the garlic and cook until it smells good. Stir-fry the mixed vegetables in the pan until they are tender-crisp. Soy sauce and cauliflower rice should be added to the pan. For four to five minutes, or until the cauliflower is fully cooked, stir-fry it. Add pepper and salt to taste. Before serving, sprinkle chopped green onions and sesame seeds on top.
