Ingredients: 1 tbsp olive oil. 1 small onion, finely chopped. 2 cloves garlic, minced. 1 bell pepper, diced. 1 cup vegetarian ground beef substitute. 1 14 oz can diced tomatoes. 2 cups vegetable broth. 1 1/2 cups elbow macaroni. 1 tsp dried basil. 1 tsp dried oregano. Salt and pepper to taste. 1 cup shredded mozzarella cheese. Fresh parsley, chopped for garnish.
Instructions: In a skillet, heat olive oil over medium heat. Add onion, garlic, and bell pepper. Saut until softened. Add vegetarian ground beef substitute. Cook until browned. Stir in diced tomatoes, vegetable broth, elbow macaroni, basil, oregano, salt, and pepper. Bring to a simmer, then reduce heat to low. Cover and cook for about 15 minutes, or until pasta is tender.
