A delightful twist on the classic Mini Pineapple Upside Down Cakes, this parfait combines the flavors of pineapple, cherry, and coconut with layers of moist cake and creamy goodness.
Ingredients: 1 cup crushed pineapple, drained. 1/2 cup unsalted butter, melted. 1/2 cup brown sugar. 12 maraschino cherries. 1 box yellow cake mix. 1 1/3 cups water. 1/3 cup vegetable oil. 3 large eggs. 2 cups whipped cream. 1/2 cup vanilla pudding. 1/4 cup shredded coconut, toasted.
Instructions: Preheat oven to 350F 175C. In a bowl, mix melted butter and brown sugar until well combined. Divide the mixture into 12 portions and place them in the bottom of parfait glasses. Add a maraschino cherry to each glass on top of the butter-sugar mixture. In another bowl, prepare the yellow cake mix according to package instructions. Pour the cake batter evenly into the parfait glasses over the pineapple mixture. Bake in the preheated oven for 15-20 minutes or until a toothpick comes out clean. Let the mini cakes cool completely. In a separate bowl, mix whipped cream and vanilla pudding to create a creamy layer. Layer the parfait glasses with crushed pineapple, mini pineapple upside-down cakes, and the whipped cream mixture. Repeat the layers until the glasses are filled, ending with a dollop of whipped cream on top. Sprinkle toasted shredded coconut over the whipped cream layer. Chill the parfaits in the refrigerator for at least 2 hours before serving. Serve chilled and enjoy!
