Ingredients: 1 cup hazelnuts, toasted and finely ground. 1/2 cup all-purpose flour. 1/2 cup unsweetened cocoa powder. 1/2 cup granulated sugar. 1/2 cup brown sugar. 1/2 cup unsalted butter, melted. 2 large eggs. 1 tsp vanilla extract. 1/2 tsp baking powder. 1/4 tsp salt. 1/2 cup whole milk. 1/2 cup semisweet chocolate chips. 2 cups powdered sugar. 1/4 cup blood orange juice. 2 tbsp blood orange zest. 1/4 cup unsalted butter, softened. 1/2 tsp vanilla extract. Blood orange slices and hazelnuts for garnish.
Instructions: Grease a mini cake or muffin tin and preheat the oven to 350 degrees Fahrenheit 175 degrees Celsius. Finely ground hazelnuts, all-purpose flour, cocoa powder, brown sugar, and granulated sugar should all be combined in a mixing bowl. To the dry ingredients, add the eggs, vanilla extract, baking powder, melted unsalted butter, and salt. Blend until thoroughly blended. Once the batter is smooth, stir in the semisweet chocolate chips and whole milk. Fill each cavity of the mini cake or muffin tin about two thirds of the way to the top with the batter. A toothpick inserted into the center of the cake should come out clean after 20 to 25 minutes of baking in a preheated oven. Make the blood orange frosting while the cakes are baking. Mix the powdered sugar, softened unsalted butter, blood orange juice, zest, and vanilla extract in a mixing bowl. Beat until creamy and smooth. After cooling, take the mini cakes out of the tin and cover each one with a layer of blood orange frosting. Add toasted hazelnuts and slices of blood orange as garnish. Present and savor!
