The tangy citrus flavors and sweet coconut in these Yummy Coconut Lemon-Lime Bars with Shortbread Crust go so well together. They are topped with a buttery shortbread crust. Great for when you want something sweet at any time of the day!
Ingredients: 1 cup shredded coconut. 1 cup all-purpose flour. 1/2 cup powdered sugar. 1/2 cup unsalted butter, cold and cubed. 4 large eggs. 1 1/2 cups granulated sugar. 1/2 cup lemon juice. 2 tablespoons lime juice. 2 tablespoons all-purpose flour. 1/2 teaspoon baking powder. 1/4 teaspoon salt. Powdered sugar, for dusting optional.
Instructions: Warm the oven up to 175F 350C. Shred coconut, add 1 cup of flour, powdered sugar, and cold cubed butter to a food processor. Pulse the ingredients together until the mixture looks like coarse crumbs. A crust should be pressed into the bottom of a 9x13-inch baking pan that has been greased. Bake the crust for 15 to 20 minutes, or until it turns a light golden color. In the meantime, mix the eggs, sugar, lemon and lime juices, 2 tablespoons of flour, baking powder, and salt together in a bowl using a whisk. Put the lemon-lime mix on top of the hot crust. When you put the pan back in the oven, bake for another 20 to 25 minutes, or until the filling is set and the edges are just beginning to turn golden brown. Let the bars cool all the way through in the pan on a wire rack. Sprinkle with powdered sugar if you want after it has cooled. Make bars and serve. Have fun!
