Enjoy the bright flavors of the sea with this Poke Bowl of Ahi Tuna and Spicy Salmon. Ahi tuna and salmon that are good enough for sushi are marinated in a sour and spicy sauce. They are then served on top of fluffy sushi rice with crunchy cucumber, creamy avocado, and nutty sesame seeds.
Ingredients: 8 oz sushi-grade ahi tuna, cubed. 8 oz sushi-grade salmon, cubed. 1/4 cup soy sauce. 1 tbsp sesame oil. 1 tbsp rice vinegar. 1 tsp honey. 1 tsp sriracha sauce. 1 avocado, sliced. 2 cups cooked sushi rice. 1/2 cup edamame beans, cooked. 1/2 cup cucumber, diced. 1/4 cup green onions, thinly sliced. 2 tbsp sesame seeds. 1 tbsp nori seaweed, thinly sliced.
Instructions: In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, honey, and sriracha sauce to make the marinade. Place the cubed ahi tuna and salmon in separate bowls. Pour half of the marinade over each bowl, ensuring the fish is well coated. Cover and refrigerate for at least 30 minutes. Meanwhile, prepare sushi rice according to package instructions and let it cool slightly. Once the fish has marinated, assemble the poke bowls by dividing the sushi rice among serving bowls. Arrange the marinated ahi tuna, salmon, avocado slices, edamame beans, diced cucumber, and sliced green onions on top of the rice. Drizzle the remaining marinade over the poke bowls and sprinkle with sesame seeds and nori seaweed. Serve immediately and enjoy!
