IL GOMASIO (self-Made)

I needed a mortar and pestle, decided on a Japanese style because I’m getting old and the volcanic Mexican style just looks heavy. I think it’s perfect. A bit of gentle pounding, rubbing this way, that way, the other way and I quickly made a paste of garlic and ginger. I don’t know why I waited so long to get one. And the thingy in the jar is a wok scrubbing brush made of bamboo. I’m impressed. I also scrub the cast iron, and all the pans with it now. It was $5. It replaced an ugly plastic scrubber that I had paid a buck for. Yup, I’m moving on up.

This traditional Japanese mortar is also known as suribachi and it comes with a surikogi, a wooden pestle made from Japanese cypress. The handmade fine grooves in the ceramic suribachi are crafted for easy grinding and crushing of ingredients while allowing them to retain some texture. It works well with the surikogi in bringing out the natural aromas of the ingredients and in extracting oils from seeds and nuts. Microwave and dishwasher-safe.
