Ingredients: 1 zucchini, sliced. 1 eggplant, sliced. 1 red bell pepper, sliced. 1 yellow bell pepper, sliced. 1/2 cup cherry tomatoes. 1/4 cup black olives. 1/4 cup green olives. 4 ounces salami, sliced. 4 ounces prosciutto, sliced. 1/4 cup olive oil. 2 tablespoons balsamic vinegar. 1 teaspoon Italian seasoning. Salt and pepper, to taste.
Instructions: Preheat the grill to medium-high heat. In a large bowl, toss the sliced zucchini, eggplant, red bell pepper, yellow bell pepper, cherry tomatoes, black olives, and green olives with olive oil, balsamic vinegar, Italian seasoning, salt, and pepper. Thread the vegetables onto skewers, alternating with the salami and prosciutto slices. Grill the skewers for 10-15 minutes, turning occasionally, until the vegetables are tender and lightly charred.
