Shredded pork that is cooked slowly in a flavorful mix of spices and is very tasty. It's great for stuffing tacos with your favorite toppings.
Ingredients: 3 lbs pork shoulder, trimmed and cut into chunks. 1 onion, chopped. 4 cloves garlic, minced. 1 cup chicken broth. 1 can diced tomatoes. 2 tablespoons chili powder. 1 tablespoon cumin. 1 teaspoon paprika. 1 teaspoon oregano. Salt and pepper to taste. Tortillas, for serving. Your favorite taco toppings e.g., salsa, avocado, shredded cheese, etc..
Instructions: Put the chicken broth, diced tomatoes, chili powder, cumin, paprika, oregano, salt, and pepper in the slow cooker. Also add the pork and onion. Put the lid on top and cook on low for 8 hours or high for 4 hours, until the pork is soft and can be shred with a fork. Once the pork is done, use two forks to shred it right in the slow cooker. Put the pork shreds in tortillas and top them with your favorite taco toppings.

Ingredients: 2 lbs pork shoulder, trimmed and cut into chunks. 1 cup long-grain white rice. 1 can 15 oz black beans, drained and rinsed. 1 cup corn kernels fresh or frozen. 1 large onion, finely chopped. 1 bell pepper, diced. 3 cloves garlic, minced. 1 teaspoon ground cumin. 1 teaspoon dried oregano. 1 teaspoon smoked paprika. 1/2 teaspoon ground coriander. Salt and black pepper to taste. 2 cups chicken broth. 1/4 cup orange juice. 2 tablespoons lime juice. 2 bay leaves. Fresh cilantro, chopped, for garnish. Lime wedges, for serving.
Instructions: To make the pork chunks taste better, add salt, black pepper, oregano, cumin, and smoked paprika. While the pan is on medium-high heat, brown the pork chunks on all sides. Put the pork in the slow cooker. The onion, bell pepper, and garlic should be cooked in the same pan until they become soft. Cook the vegetables in a pan and then put them in the slow cooker. In a slow cooker, put together chicken broth, rice, black beans, corn, orange juice, lime juice, and bay leaves. Use a stir to mix. Leave the lid on and set the heat to low. Cook for 6 to 8 hours, or until the rice is done and the pork is soft. To serve, take out the bay leaves and use a fork to fluff up the rice.
