Husband approved healthy dinner. Another simple easy satisfying home cooked dinner. Instant pot balsamic pork tenderloin with steamed okra and parsnip fries. Recipe for the pork tenderloin-- two 1.5 to 2 lbs tenderloin 2 tbsp olive oil 4 cloves garlic chopped 1/4cup balsamic vinegar 1/4 cup agave nectar (I use much less) 2 tbsp low sodium soy sauce 2 sprigs rosemary or 1 tsp dried rosemary 1 tbsp cornstarch or less Set Instant pot to saute function. Heat oil add tenderloins. Very lightly brown tenderloins.on all sides. Turn pot off. Add all other ingredients except cornstarch into tenderloins. Stir to coat tenderloins. Cover, set vent to close, put on meat functions, set at 30 mins and start. At end of 30 mins, release pressure, open and flip tenderloins over. Close lid, set vent to close, select meat function, set time for 5 mins and start. At end of cook time, release pressure, open and take meat out. Add a little water to cornstarch to make paste. Add a little of the paste at a time into the sauce in the instant pot to thickness of choice. Slice meat, drizzle sauce and voila! Sauce is excellent on the steamed okra too.
