tried to crochet today.
it was a half-failure, as I apparently didn't understand what my mom showed me about end-row stitches or whatever they're called. I kept making triangles by accident. ugh.
My vest with pockets doesn't have buttonholes so my pocket watch chain can't hide how it gets attached like it's supposed to... Fuck it. It's still as classy as I can get.
Danish Braids are Hard to Make
Ok, first try. Turned out kinda of right, I suppose, but I dove right in, reading the instructions as I went a long. Well, if you've ever made what I've since learned is called a laminated dough, you know it's very time consuming. Plus, I've never proofed a dough before, so I tried to do that by placing the braid on top of the oven while it was on. It kind of worked but I could tell there was too much heat because the butter started to melt out. The dough rose a little, I think. I've got another piece of dough left, so I'll try again with that and see if I can get the construction a little tighter.Â
Anyway, I got the recipe from Rose Levy Beranbaum's Pie and Pastry Bible.Â
It really tastes fantastic, though, so I got something right.
The filling:
Melted chocolate under raspberry puree with a little sugar and ground almonds.Â
There's supposed to be sliced almonds on top, but I don't like almonds that much.Â
I could eat the whole damn thing. It tastes that good. Still, I know I didn't get the dough right. Better time and temperature management is needed next time.Â

My First Attempt at Japanese Cheesecake
Alas, in keeping up with my track record with cheesecakes, this Japanese cheesecake did not come out the way I had wanted it to be! As always, it sank and did not have smooth edges. I ended up underbaking the cake because I was really anxious about leaving it too long in the oven.
Nonetheless, it was light and soft and was lightly sweet. This is why I like Japanese cheesecakes better than the ones we usually have (like NY cheesecake), which I find too heavy. On the other hand, if you haven't tried Japanese cheesecake before, I can tell you that it tastes nothing like its Western counterpart - it is more of a spongey cake with a hint of cream cheese taste. It actually reminds me of mamon (Filipino sponge cake).

first try: epic fail
ten minutes later: semi-fail
twenty minutes later: a tad bit better
an hour later: no improvement
3 hours later: better, but so far to go
