Potatoes that have been harvested too early. The skin of a tuber is very soft and not well attached during late tuber bulking to allow for rapid expansion. As a crop naturally senescences, dies back, the tuber skins would start to set. Normally skin set starts when the haulm is either chemically burnt or mechanically chopped. It takes between 3 weeks and 8 weeks to fully set skins depending on factors like variety, soil temperature, moisture levels, etc. The skin needs to be set before harvest to protect the tuber from being damaged and scuffed at harvest and to keep the tubers in good condition for storing. The set skin also stops bacterial infection from entering and causing rots and other diseases. If potatoes are harvested early then the tubers will be scuffed, turn dark brown and eventually become dehydrated.
