These AIP, Paleo, grain-free, and coconut-free biscuits are ideal for people on a restricted diet. They taste great when added to soups and stews or eaten as a snack on their own because of their savory and delicious flavor.
Ingredients: 2 cups cassava flour. 1/2 cup coconut oil, melted. 1/4 cup water. 1 tsp baking soda. 1/2 tsp sea salt. 2 tsp apple cider vinegar. 2 tbsp dried herbs such as rosemary, thyme, or oregano.
Instructions: Preheat oven to 350F 175C. In a large mixing bowl, combine cassava flour, melted coconut oil, water, baking soda, sea salt, and apple cider vinegar. Mix until a dough forms. Fold in dried herbs into the dough. Form the dough into small balls and flatten them into biscuit shapes on a baking sheet lined with parchment paper. Bake in the preheated oven for 15-20 minutes, or until the biscuits are golden brown and cooked through. Remove from the oven and let cool slightly before serving.
