Stressed? We’ve had some medical issues, workmen in the house for days and the world is going nuts. So, for me, that means I have to have a potato or two. Potatoes are my top comfort food, I crave them like other people crave chocolate. Is that crazy? Anyway, here’s one of my go-to preparations. Simple, easy. Rosemary Potatoes 16-18 small “new” or red bliss potatoes 2 tablespoons butter (or use vegetable or olive oil or margarine) 2 tablespoons vegetable or olive oil Salt and freshly ground black pepper to taste 1-1/2 tablespoons chopped fresh Rosemary (or 1-1/2 teaspoons crushed dried Rosemary) Cook the potatoes in lightly salted simmering water for about 15-20 minutes or until tender. Drain, let cool slightly and peel. Heat the butter and vegetable oil in a sauté pan over medium heat. When the butter has melted and looks foamy, add the potatoes. Sprinkle with salt and pepper and cook, turning the potatoes occasionally for about 10-12 minutes. Sprinkle with the Rosemary and cook, turning the potatoes occasionally, for another 8-10 minutes or until the potatoes are crispy and browned.
