Hey! I wanted to take a minute and thank @redheadedsims for providing me with info on not sweetened version of coquito, which I had been grousing about not being able to find!
Recipe and more of my yammering below the cut...
Actually, there are tons of recipes for coquito. There is one that takes diabetics into consideration (which would eliminate your sugar fears). LOL 2 cans of coconut milk (use Goya) Rum, usually a third of the bottle A can of coconut cream (use Goya) a cinnamon stick

DIRECTIONS Find a empty bottle of something (a wine bottle, a 2 liter bottle, something big). Place the cinnamon stick in the bottle. Pour the milk, cream, and rum into the bottle. Put the lid on the bottle and shake it like crazy. Sing a little and act like the bott

Please serve it cold. Do not chug it. Iâm not even going to figure out the nutrition values. If youâre diabetic, one shot and thatâs it. Trust me, you drink 8 oz of this and you will get sick.
So thank you! I really did google for this quite a bit last year and again this year and never did I ever find one that did not use sweetened condensed milk and âCoco Lopezâ style (sweetened) cream of coconut. (YES - coconut cream and cream of coconut are different!!) Â
And also to clarify - I am not diabetic yet (and hopefully not ever, but genetics...). I have a familial predisposition to it given that both of my parents have/had it (not sure what tense to use there since one is living and the other passed away) so I like to seriously cut down on sugar where I can. Since I donât eat a great deal of sweet things, when I do I find them cloying and unpleasant.
Anyhooo - now that Iâm armed with the knowledge (it does exist!), Iâll probably translate this into a one-off version (i.e. a single serving done in a cocktail shaker).
EDIT: I did a little looking around, and actually the Goya brand cream of coconut (I did not find anything labelled âcoconut creamâ) is sweetened. But I can experiment with actual coconut cream instead I think. (It may seem like semantics, but coconut cream and cream of coconut are different things.)
