Is there anything more comforting on a rainy Sunday morning than yummy, sweet, fragrant Challah French Toast? Now, I must admit - I was never a french toast fan growing up. I think it was just way too egg-y for me, but I also rarely ate eggs when I was growing up, so maybe that had something to do with it. But this french toast - wow! It is so delicious. That perfect balance between crispy and soft, plus how beautiful is that rainbow challah! I made that for Pride, which was this week in NYC, and I had a whole loaf left over so I knew I would be making challah french toast for brunch today. (The challah I made is based off this recipe.) Matt and I are busy today cleaning the apartment, so we needed a yummy breakfast to get us started for a long day! Blackberries are also my absolute favorite fruit, so I had to throw a few on top of my french toast - they are the perfect tartness to counter the sweetness of the french toast. I hope you enjoy!
Rainbow Challah French Toast
1 small loaf challah bread (homemade or store bought)
3 eggs
1/3 cup milk (I use almond milk)
1 tsp cinnamon - I grated cinnamon sticks fresh but you can use ground cinnamon if that’s what you have in your pantry.
1 tsp ground cloves - my secret ingredient!
1 tbsp brown sugar
Whisk together the eggs, milk, cinnamon, cloves, and sugar until well incorporated, in a large bowl. Slice your challah bread into 1 inch slices. Heat up your pan (I use nonstick, but if you’re using another type of pan make sure you spray it with a little cooking spray!) Dredge 1-2 slices at a time, depending on how large your pan is - the longer you soak the challah, the eggier it will be, so soak to your preference. Make sure both sides are covered! Shake off the excess egg (or else you will have scrambled eggs coating your french toast) and place in your hot pan. Cook 3 minutes per side, or longer if needed. I sprinkled my french toast with a bit more freshly grated cinnamon and sugar sprinkles before serving, but you can add whatever your taste buds desire! Enjoy with butter, syrup, or fresh fruit!
