We Had very nice weather the last few days. I had another wonderful trip to Maxwell Wildlife Preserve this past Saturday but it is still winter so the cold weather returns.

    I used a 3 pound pork roast instead of a 2 tenderloins. It will take a little longer to cook so cook until done. .  I cut in the center as directed in the roast.

2-cup small potatoes 1/4 cup thinly sliced onion salt according to taste oil as required

 For hari chutney ( Mint sauce )

1-cup finely chopped pudina (mint ) 1/4 cup finely chopped corainder / cilantro 1 tbs lemon juice 1/4 tsp sugar 2-4 finely chopped green chillies salt according to taste

 Procedure

1. Mix all the ingredients for chutney and grind it till desired paste like texture is obtained.

 2. Steam cook potatoes, adding salt to water.Peel potatoes.

 3. Heat around 2-3 tsp oil in a non-stick pan and add onion, potatoes, salt, and chutney. Mix them well and cook on low flame for 2- 5 minutes.
