Enjoy the creamy goodness of this vegan kale Caesar salad that doesn't have any mayonnaise in it. The cashew, nutritional yeast, and seasonings make a creamy dressing that goes perfectly on the kale leaves. This makes for a satisfying and healthy meal.
Ingredients: 1 bunch kale, stems removed and chopped. 1 cup raw cashews, soaked in water for 4 hours or overnight. 3 tablespoons nutritional yeast. 2 tablespoons lemon juice. 2 cloves garlic. 2 tablespoons capers. 1 tablespoon Dijon mustard. 1 tablespoon maple syrup. 1/4 cup water. Salt and pepper to taste. Croutons, for serving. Vegan parmesan cheese, for garnish optional.
Instructions: Cashews that have been soaked, nutritional yeast, garlic, capers, Dijon mustard, maple syrup, and water should all be put in a blender. Mix until it's creamy and smooth. Pour the creamy dressing over the chopped kale in a large bowl. Apply the dressing to the kale leaves and mix them well. Add pepper and salt to taste. If you want, you can serve it with croutons and vegan parmesan cheese on top.
